You can never have enough Bread. Never.
2 ½ cups strong white bread flour (Or all purpose flour)
2 packets of instant yeast
1/2 tablespoon of salt
2 tablespoons sugar
1/3 cup olive oil
1 cup water
Pinch of Zaatar
-2 balls of Buffalo Mozzarella cheese, sliced
-Sliced small Tomatoes
-Fresh Basil Leaves
In a mixer fixed with a paddle attachment place all the dry ingredients and mix on low speed to combine. Follow with the olive oil and mix to combine, then follow with the water and mix on medium low speed for about 5 minutes or until you get a well held dough. Place in an oiled bowl and cover with a towel and allow to rise for about 45 minutes or until doubled in size.
Preheat the oven to 225C and oil a rectangular pan. Punch down the dough and using your hands and palm, spread out the dough in the pan until it covers all sides. Drizzle and brush some olive oil, a grinding of sea salt, and the pinch of Zaatar.
Bake in the oven until golden brown.
Remove from the oven and allow to cool then cut them into little squares and slice and fill them all with a slice of tomato, Buffalo Mozzarella, and fresh basil leaves. End it all with a tooth pick to keep them in place and enjoy!
You can definitely use the bread with other fillings, or even eat it by itself.
